Abstract

A review concerning occurrence of alkoxypyrazines in nature and their sensorial properties. Pyridines belong to important flavour substances containing nitrogen. Besides alkylpyrazines, they represent the second most important group of such compounds and play a key role in most vegetables and other types of commodities of plant origin.
